3 c. fresh gooseberries
1 ½ c. sugar
3 T. quick-cooking tapioca
¼ tsp. salt
Pastry for 2-crust pie
2 T. butter or margarine

Directions:
Directions:
Crush ½ c. of the gooseberries: combine with sugar, tapioca, and salt. Add the whole berries. Cook and stir until mixure thickens. Line 9 inch pie plate with pastry and fill with gooseberry mixture. Dot with butter. Add top crust. Bake at 450º for 10 minutes. Reduce heat to 350º and bake about 30 min. longer or until crust is done. Serve slightly warm. Ice cream doesn’t hurt!

We were first introduced to Gooseberries by Anne Baudler. Anne was a retired elderly spinster, kindergarten teacher. She was somewhat of a legend in Sheldon. She had a huge gooseberry patch in her back yard. We transplanted a number of her bushes so had our own gooseberries for a number of years. Made Yum Yum pie.
