2/3 c. sugar
1/3 c. water
2/3 c. heavy cream
4 large ripe peaches

In heavy 2 qt. saucepan, bring sugar and water to boiling over moderately high heat, stirring constantly until sugar is dissolved. Reduce heat and keep mixture at a simmer. Continue to cook without stirring until mixture begins to turn a day, golden color (about 18 to 20 minutes). Wipe down sides of pan with pastry brush if mixture begins to spatter side of pan. Remove from heat. Immediately stir in cream (mixture will bubble up in pan so be careful). Pour into small bowl. After cooling down, put mixture in refrigerator to chill.

To serve: thickly slice peeled peaches into individual dishes; drizzle with caramel creme.
