1 can shoe peg corn, drained
1 can pinto beans with jalapeņo, drained
1 can black-eyed peas with jalapeņo, drained
1 C green peppers, finely chopped
1 C celery, finely chopped
1 small onion, finely chopped
red pepper or pimento (for color), chopped
Marinade:
3/4 C apple cider vinegar
1 C sugar
1/2 C oil
1/2 tsp salt
1/2 tsp pepper

Directions:
Bring sauce to a boil. Pour over bean mixture. Marinate at least an hour, overnight is best. Serve with Frito Scoops.
