8 ounces (oz.) of crumbled feta cheese
3 tablespoons (tbsp.) of finely chopped green onions
1 beaten egg
1 (17.5 ounce) package of frozen puff pastry, thawed
1 egg yolk beaten with 1 teaspoon (tsp.) of water

Directions:
Directions:
1) Preheat the oven to 375 degrees.
2) In a small bowl, blend the feta cheese, green onions, and egg. Cut the pastry into 12 (3 inch) squares.
3) Place a mounded tablespoon of feta mixture in the center of each square. Moisten the edges with water and fold the pastry over the filling to form a triangle.
4) Press the edges together firmly with a fork to seal and lightly brush the pastries with the egg yolk mixture.
5) Bake for 20 minutes in the preheated oven, or until golden brown. Serve warm or at room temperature.
