Peanut Butter Pie Recipe

9" Pet Ritz pie crust, baked

1/2 C peanut butter
1 C powdered sugar
Mix into size of small peas. Spread all but 1/3 C (for top) on pie crust

3 egg yolks
1/4 C cornstarch
2/3 C sugar
1/2 C milk
Mixture will begin to thicken. Stir constantly with spoon or whisk not to scorch.
2 C milk Add a little at a time. Stir well.until mixture thickens.
Add:
1 T. butter
1 T. brown sugar
2 tsp. vanilla
2 T. peanut butter
Pour in pie shell.

Meringue:
3 egg whites
1/4 tsp. cream of tartar
1/2 C sugar

Directions:
In large bowl, beat egg whites and cream of tartar with electric mixer on medium speed until soft peaks form. On high speed, gradually beat in 1/2 cup sugar until stiff glossy peaks form and sugar is almost dissolved. Spoon meringue onto pie. Sprinkle remainder of peanut butter mixture over meringue. Bake 325 degrees until golden brown. 10 minutes.
