2 Cups Gluten free all purpose baking flour
1 tsp. baking soda
1/4 tsp. salt
4 eggs
2 Cups mashed ripe bananas
1/2 Cup brown sugar
1/2 Cup unsweetened applesauce
1/3 Cup oil
1 tsp. vanilla
1/2 Cup chopped nuts

Directions:
Directions:
1. In a large bowl, combine flour, baking soda, salt and brown sugar. In a medium bowl, whisk the eggs, bananas, applesauce, oil and vanilla. Stir into dry ingredients until just moistened, stir in chopped nuts if desired.
2. Fill muffin cups or make 2 - 8X4 loaves.
3. Bake at 350º, muffins, about 30 minutes, loaves 45-50 minutes.

I use coconut oil, heat until just melted and measures the 1/3 cup that you need.
