1 lb lean ground beef
1 lb ground pork
8 oz chicken livers, minced
2 medium onions finely chopped
4 large garlic cloves, crushed
5 oz bacon or panchetta chopped
2 14 oz cans chopped tomatoes
2 7 oz cans of tomato paste
14 oz red wine
1 oz basil
1/2 tsp grated nutmeg
salt and pepper

Saute the onion and the garlic in 3 tbsp of olive oil. Add the bacon to the pan and fry for 5 minutes. Add the beef and brown it. Drain the fat and put the beef mixture into a dutch oven. Brown the pork . Drain and transfer to the casserole. Brown the chicken livers and add to the casserole. Add the tomatoes, the tomato paste, red wine and salt, pepper and nutmeg, Bring to a boil. Add half of the basil leaves. Bake at 300 uncovered for about 4 hours or until very thick with very little liquid left.
Serve over pasta.
