5 large potatoes, completely cooked and peeled (allow to cool several hours or overnight, then grate)
2 c. half and half or evaporated milk
1 stick butter
1 T. salt
1/2 lb. Velveeta cheese
8 oz. sour cream
Crisp bacon, crumbled (not bacon bits!)

Preheat oven to 375ºF. In saucepan, combine milk, butter, salt and cheese. Heat until cheese and butter melt. Add to grated potatoes. Mix thoroughly. Pour into 13x9 casserole. Bake for 40-45 minutes. Top with sour cream and bacon before serving.

This recipe is by no means considered a healthy dish, but it is the absolute best potato dish I’ve ever had. We always served it whenever we had grilled steak for dinner in my family. The hardest part is waiting for the potatoes to cool (whether you’ve baked, microwaved, or boiled them) so you can grate them. I have several burn marks on my hands to prove how important this step is!
