1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/3 cup butter
1 cup dark brown sugar, packed
1 cup sugar
1/2 cup cooking oil
2 eggs
1 tsp vanilla
1 1/2 cup rolled oats
1 cup coconut
1 cup raisins
1 cup semisweet chocolate pieces
1/2 cup chopped walnuts (or other nuts)

In a bowl, stir together flour, baking soda and salt. In a very large mixing bowl, beat butter for 30 seconds with electric mixer. Beat in sugars, oil eggs and vanilla. Add flour mixture, beat until well combined. Stir in rolled oats, coconut, raisins, chocolate pieces and nuts. Drop by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake at 325º for 10-12 minutes or until edges are lightly browned. Cool 1 minutes on cookie sheet and transfer to wire racks to set.
