• 1 cup grated apple
• 1 cup sugar
• 1 cup beef suet
• 1 cup grated carrot
• 1 cup flour
• 1 cup floured raisins
• 1 cup breadcrumbs
• 1 tsp cloves
• 1 tsp cinnamon
• 1 tsp salt
• ½ tsp soda
• ½ tsp nutmeg
• 4 level tsp molasses

Hard Sauce:
• ½ cup butter
• 2 cup confectioner’s sugar
• 1 tsp vanilla

Spiced Rum Sauce

This takes less than 5 minutes to make, may be refrigerated (covered) several days and is easily reheated in a microwave or saucepan. It’s good on pudding or ice cream.


• 1 cup packed brown sugar
• 2 tbsp cornstarch
• 1 ½ cups water
• Ό cup dark rum
• Ό tsp nutmeg
• 2 tbsp butter

In heavy saucepan, mix together brown sugar and cornstarch. Sir in water. Bring to boil, stirring constantly. Reduce heat, add rum, nutmeg and butter; simmer for 2 minutes. Serve hot. Makes 2 cups (500ml).


Brandy Hard Sauce

Easy to make ahead and chill, this sauce melts deliciously on hot steamed pudding.


• ½ cup butter
• 1 ½ cups sifted icing sugar
• 1 egg yolk
• 2 tbsp brandy

Cream butter until light and fluffy. Gradually add icing sugar, beating well. Beat in egg yolk and brandy until very smooth. Chill until firm. Makes about 1 ½ cups (375 ml).
