2 cups sugar
1 1/2 cups oil
1 TBSP cinnamon
2 cups flour
2 tsp baking soda
3 grated carrots

Directions:

Whip together eggs, sugar and oil until frothy. Add remaining ingredients and mix together until stiff. ("You can't over- or undermix this." - Ed Howard) Pour onto oiled jellyroll (11X15) pan. Let sit 5 minutes until bubbles that come to surface break. Bake at 300 º for 45 minutes.

The recipe that was published in the Roanoke Times made 6 sheet cakes. I cut it down to 1/12 of that to make a half-sheet or jellyroll pan.
