1 doz. to 16 crabs (cooked, cleaned, and separated)
1 1/2 lbs. shelled shrimp
1/2 cup cooking oil
1/2 cup flour
2 large onions, chopped
green onions, several, chopped, using the tops
5-6 cloves garlic, put through press
green pepper , 1 or 2, chopped
celery, 1 or 2 stalks, chopped
parsley, chopped
salt and pepper to taste
2 quarts warm or hot water
1/2 lb. finely chopped okra (can use frozen, thawed)
1 large can crushed tomatoes






Directions:

Roux: 1/2 cup cooking oil and 1/2 cup flour. Cook over medium heat approximately 20-25 minutes stirring constantly until nutty brown.

Add to roux and stir continuously:
chopped onions, green onions, and garlic

After cooking above vegetables a short time, add:
green pepper, celery, parsley, and salt and pepper

Let cook for several minutes, after which you add:
2 quarts warm or hot water, okra, and tomatoes

Let cook until vegetables are tender.

Add crabs and cook slowly for about 30 minutes then add shrimp. Bring to a boil and let simmer for several minutes. Before crabs and shrimp are added, you may want to add water. This makes a large pot of gumbo. Serve over rice with hot crusty French bread.
