1 eggplant, peeled and sliced
1 onion, chopped
1 half-pack of saltine crackers
1 egg, beaten
Big dab of butter
Salt and papper

Directions:
Directions:
Peel and slice eggplant; cook in salted water until real soft; drain well.

Crumble saltine crackers into egggplant. Add the egg and butter, salt, pepper and onion. Mix well.

Take tablespoon full and drop into hot bacon grease and fry.
