3 eggs
1 c. oil
2 c. sugar
2 c. peeled and grated zucchini
2 tsp. vanilla
¼ tsp. baking powder
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon

Directions:
Directions:
Beat eggs until foamy, then add oil, sugar, zucchini, and vanilla
Sift together the five dry ingredients blend with egg mixture.

Add ½ c. nuts and divide batter into 2 greased & floured loaf pans.
Bake at 325º for 1 hr. or more.
Remove from pan immediately and cool.

** may also add 1 c. chopped dates.
