8 T unsalted butter
8 oz semisweet chocolate
5 large eggs, separated
3/4 c. sugar
2 tsp. vanilla
1/2 tsp. salt

Directions:
Directions:
1. Preheat oven to 350 - on convection bake
2. Grease daisy mold or other non stick pan.
3. In metal bowl over double boiler, melt butter and chocolate, remove from heat.
4. Mix yolks together with sugar and vanilla.
5. Beat whites and salt until stiff.
6. Fold chocolate mixture into yolk mixture a little at a time.
7. Fold in egg whites.
8. Pour into pan.
9. Bake 40 minutes until spongy.
10. Remove from oven, cool on wire tray for ten minutes, then unmold on plate.
11. Cool completely, dust with powdered sugar or frost.
