1 pound packages of the following beans:

Barley, Black Beans, Black Eyed Peas, Garbanzo Beans, Great Northern Beans, Kidney Beans, Lentils, Lima Beans, Large Lima Beans, Baby Green Beans, Mung Beans, Navy Beans, Pinto Beans, Red Beans, Small Red Beans, Green Split Peas, Yellow Split Peas, Soy Beans

Recipe:
1-1/2 c. assorted beans
2 qt. water
Ham hock (or 1# ham pieces)
1 tsp. salt
1 can Rotel tomatoes and chili peppers
1 large onion, chopped
1 clove garlic, minced
Juice of one lemon

Directions:
Directions:
Mix together 1 pound packages of all of the above beans, then measure 1-1/2 cups of beans for a pot of soup. (Store the remaining beans in a large jar). Put beans in a large stock pot and cover with water and soak overnight.

Drain; then add water, hamhock, salt and cook slowly for 3 hours. Add tomatoes, onion, garlic, and lemon juice. Simmer 2 more hours. Add salt if necessary.
