1 ½ c. brown sugar
1 egg
½ c. oleo
1 tsp. vanilla
1 c. buttermilk
2 c. flour
2 c. diced rhubarb
½ tsp. salt
1 tsp. baking soda

Topping:
½ c. brown sugar
1 tsp. cinnamon
*optional additions may include nuts or coconut

Directions:
Directions:
Cream first 4 ingredients. Add sifted dry ingredients and add buttermilk. Fold in diced rhubarb. Pour into greased 9x13 pan. Sprinkle topping over batter.

Topping: Mix ½ c. brown sugar, 1 tsp. cinnamon, and nuts or coconut, if desired.

Bake at 350 degrees 35-40 minutes.

*additional note: Same batter can be made into bread, (loaf pans) sprinkle topping
add 1 ½ c. nuts to batter. Bake 60 minutes at 325 degrees.
