14 1/2 oz. chicken broth
1 1/2 c. instant rice
1 T. butter
1 lb. ground beef
6 oz. bulk spicy pork sausage
1/2 lb.sliced fresh mushrooms
1 1/2 garlic cloves, minced
1 T. butter
10 oz. frozen chopped spinach, thawed & squeezed dry
8 oz. cottage cheese
4 eggs, beaten
1 pkg onion soup mix
1 tsp. garlic powder
1/2 tsp. Creole seasoning - can substitute 1/8 t each: salt, garlic powder, paprika; a pinch: dried thyme, ground cumin, cayenne pepper
1/4 c. Parmesan cheese

Bring chicken broth to a boil in saucepan. Add instant rice to broth; cover & remove from heat. Let set for 5 minutes. Stir butter into rice; set aside. Cook ground beef and sausage until no longer pink; drain; transfer to bowl. Saute mushrooms & garlic until tender; add to meat mixture. Stir spinach, cottage cheese, beaten eggs, onion soup mix, garlic powder and creole seasoning into meat mixture along with cooked rice. Put in greased 9x13 pan. Sprinkle Parmesan cheese on top. Cover and bake at 350º for 45 minutes. Uncover; bake 10-15 minutes longer or until heated through.

This is one of those casseroles that tastes even better the second day. Optional toppings are sour cream and salsa.
