1 1/2 t 2 lb. lean meat
1 T. Worcestershire
1/4 tsp. garlic powder
1 tsp. hickory smoke flavored salt
1/4 c. soy sauce
1/4 tsp. pepper
1/2 tsp. onion powder

Directions:
Directions:
Trim all fat off of meat. Cut in 1/4 to 1/8 inch slices. Cut 1 1/2 inches wide and as long as you want. In bowl add all except meat, stir until dissolved; then add meat strips. Work in until well coated, meat will absorb liquid. Cover tightly and let stand overnight. In morning, shake off any remaining liquid. Then arrange all meat together, but do not overlap. Arrange on cake rack, set over pan to catch any drippings. Dry in oven on lowest setting (150-200º) until it urns brown and feels hard and dry to touch. 4 to 7 hours for beef or venison. Pat off any beads of fat and cool in air tight container. Cut meat with grain for chewie and across for more tender.
