9 - 10 cups of chopped strawberries
4 1/4 cups sugar
juice of one lemon

In a 6 - 8 qt. (large) heavy sauce pan, combine berries and sugar.

Bring slowly to a boil, stirring until sugar is dissolved.

Slow boil for approximately 40 minutes. Stir often to prevent from sticking and burning.

Add lemon and boil 5 minutes more. Skim off any foam.

Immediately fill scalded jars (1/2 inch from top). Wipe rim with damp paper towel to ensure clean seal. Cap with boiling lids.

To further thicken jam, you can add one or two grated apples to recipe, at beginning, for added pectin. You cannot taste the flavour of the apple in the jam.
