Skin and core tomatoes. Pack tomatoes into jars and seal. Place jars in cold oven on cookie sheet. Set temperature to 325º and set timer based on jar size.

quarts: 35 minutes at 325º
pints: 25 minutes at 325º

Do not open oven door until completely cool.
