1/2 cup butter, at room temperature
1 cup sugar
3 eggs
5 ripe bananas
2 tsp vanilla extract
2 cups unbleached white flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt

Bourbon whipped cream

1 cup heavy cream
2 Tbs confectioner's sugar
1 Tbs bourbon
1 tsp pure vanilla extract

Directions:

1. Cream the butter and sugar together until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Beat in the mashed bananas and vanilla. Sift together the flour, baking soda, baking powder, and salt. Fold the dry ingredients into the banana mixture.

2. Pour half of the batter into each of the prepared pans. Bake until cakes are golden brown and a knife inserted in the center comes out clean, 20 to 25 minutes. Cook the cakes in the pans for 15-20 minutes. Gently remove them from the pans and place on a rack to cook completely.

To prepare the frosting, combine the heavy cream, confectioner's sugar, bourbon, and vanilla in a chilled bowl. Beat with an electric mixer and chilled beaters until stiff. Refrigerate until you are ready to assemble the cake.
