2 T olive oil
1 stick of butter
1 garlic clove, chopped
1 cup chicken stock
1 t salt
1 1/4 c water
1/2 t red pepper flakes
pinch of sugar
1 cup Pecorino Romano cheese
6 turns black pepper
3 c half and half
1 1/4 cup corn meal (stone ground, do not use coarse ground)

Directions:
Directions:
In a heavy pot, heat oil and butter, add garlic and sauté over low heat until golden. Add chicken stock, half and half, water, salt, black pepper and red pepper. Stir to combine. Raise heat and bring to a boil. Slowly add cornmeal stirring constantly. Lower heat. Maintain a gentle boil after corn meal has been added. Continue to stir with wire whisk until thick and creamy (about 10 minutes). Turn off the heat and add sugar and cheese. Place in 8x8 glass pan. Serve with tomato sauce.
