Ingredients:  
1 head romaine lettuce, washed and cut into bite-sized pieces

For dressing:

4 T extra-virgin olive oil
1 T red wine vinegar
1 clove garlic
1 t Dijon mustard
1-2 t. Kosher salt

black pepper, to taste
1/4 cup (or more) freshly-grated Romano/Parmesan
croutons (optional)

Directions:
Directions:
On cutting board, mince and mash clove of garlic with kosher salt. Mash with side of knife until almost smooth. In a small jar, combine olive oil, vinegar, garlic/salt mixture and Dijon mustard. Shake well. Just before serving, toss lettuce with dressing in wooden bowl. Toss with Romano or Parmesan cheese. Grind black pepper on top to taste. Add croutons if preferred.
