4 eggs, well beaten
1 cup flour
1 cup water
salt pork

Filling:

1 lb ricotta
1 t salt
1 t pepper
1 t cinnamon
1 t nutmeg
1 t sugar
2 egg yolks
¼ cup grated Romano cheese

Parmesan Romano cheese
Sauce (Preferably Maraia Gold)

For Manicotti:

Add flour gradually to well-beaten eggs. Add half-cup water at a time until all is incorporated. Rub salt pork over large fry pan over medium heat before cooking each batch of crepes. If you don't have salt pork, you can use tablespoons of hard butter. Pour approx 2 T batter onto fry pan (you should be able to cook three crepes at a time) ‘til yellow and bubbly. No need to flip as the thin batter should be cooked through without doing so. Stack crepes one on top of the other. May be made in advance, wrapped tightly in Saran and frozen in two 3” piles.

For Filling:

Mix all ingredients in a medium size bowl.

Spray Pam on 13x9 pan. Cover bottom of pan with thin layer of favorite pasta sauce. Put a Tablespoon or so of filling into a crepe, roll and place in pan (seam down). Continue until a layer covers the bottom of pan. Top with sauce again and sprinkle with Romano/Parmesan. Repeat process until the pan is filled.

Cover the pan with aluminum foil. Bake at 350˚ for 35 – 40 minutes.

Sprinkle with fresh grated cheese.
