1-1/2 c sugar
1/2 tsp salt
6 Tbsp cornstarch
1-1/2 c water
3 egg, separated
Grated rind of one lemon
2 Tbsp butter
2/3 c lemon juice

Directions:
Directions:
Cook first four ingredients in the microwave until it becomes thick. Add 2 or 3 tablespoons of this mixture to the egg yolks. Mix back into pudding mixture. Then add rind, butter and juice; mix well. Put back in microwave and bring to a boil. Pour into baked pie shell.
Meringue: Boil 1/2 c water and add it to a Tbsp cornstarch mixed with a Tbsp of cold water. Mix and let it cool while you are making the pudding mixture. (Cover with saran wrap do it doesn't form a crust.) Beat three egg whites until frothy. Beat until stiff while adding 1/3 cup sugar--1 Tbsp at a time. Beat in cornstarch mixture. Pile meringue over pudding mixture, making sure to cover to crust. Bake at 400º for 10 minutes or until meringue is brown.
