1 medium onion, chopped
4 scallions, chopped
1 T. butter
1 large (16oz) can pink salmon
1 c. cottage cheese
3 eggs
2 egg yolks
2 c. whole wheat bread crumbs
1 T. minced fresh chives or 1 1/2 tsp. dried chives
1 T. minced fresh dill or 1 1/2 tsp. dried dill
1 T. minced fresh parsley or 1 1/2 tsp. dried parsley
1/4 tsp. paprika

Directions:
Directions:
Saute onions & scallions in butter and transfer to large bowl. Add salmon, cottage cheese, eggs, egg yolks, bread crumbs, chives, dill, parsley, & paprika and mix well. Take 1 T. or desired amount of mixture and form into a croquette. Place on a greased cookie sheet and bake at 350º for 20 minutes. Makes about 35 small croquettes.
