1/2 cup granulated sugar
1 egg
1/2 tsp vanilla
2 cups all-purpose flour
1 tsp baking soda
1tsp cream of tartar
Icing sugar
low sugar raspberry jam

Directions:
Directions:
In large bowl, beat butter with sugar until fluffy; beat in egg and vanilla.

In separate bowl, whisk together flour, baking soda and cream of tartar. Stir into butter mixture in 3 additions. Divide in half; flatten into discs. Wrap in plastic wrap and refrigerate until firm, at least 3 hours. (Make-ahead: Refrigerate for up to 24 hours.)

On lightly floured surface, roll out each disc to 1/4-inch (5 mm) thickness. With crinkled, 2-1/2 inch cutters, cut out cookies. With very small cutter, cut out hole in the middle of 1/2 of the coookies.

Place, 1 inch (2.5 cm) apart, on ungreased pans.


Bake in top and bottom thirds of 375° oven, rotating and switching pans halfway through, until light golden on bottoms and edges, 8 minutes. Transfer to racks; let cool completely. (Make-ahead: Store in airtight container for up to 1 week or freeze for up to 1 month).
