1 lb ground beef
1 egg yolk
1/4 t pepper
1/3 t salt
1/2 t minced parsley
1/4 t minced onion
3 T salt
4 T vegetable oil

Sauce:

1/4 c chopped celery
1 T green pepper
1 t chopped onion
1/3 t salt
1/4 t paprika
1/2 t sugar
1 1/2 c stewed tomatoes

Directions:
Directions:
mix meat, egg yolk, and seasonings. shaped into 6 balls and roll in flour. Brown quickly in the oil.

Sauce:

add celery, peppers and onions to meat balls, simmer covered 2 minutes, add other ingredients and cook slowly 15 to 20 minutes or until thickened.

turn occasionally to allow even cooking
