2-3 lb. roast, trimmed and cubed
1 onion, chopped
1 lb. carrots, peeled and chunked
1-2 lb. potatoes, peeled and chunked
1 small can tomato paste
4 c. chopped tomatoes
1 c. fresh mushrooms, washed and sliced
garlic powder, salt, pepper, brown sugar, thyme to taste

Directions:
Brown beef in a little oil. Remove beef and set aside. In remaining oil, saute onion and mushrooms. Add tomato paste and saute 5 minutes. Add spices and a little flour to thicken. Add tomatoes, carrots, and potatoes. Cook until vegetables are just starting to soften. Add beef back and bake at 325º for 2-3 hours.

I also added beef broth and water to get it to the desired consistency.
