Soak overnight: 1/2 C. poppy seeds,1 C. milk, 1 t. vanilla

CAKE:
3/4 C. butter
1 1/2 C. sugar
2 C. sifted flour
2 tsp. baking powder
1/2 tsp. salt
4 egg whites, beaten stiff

FILLING:
3/4 C. sugar
4 egg yolks
2 T. cornstarch
1 1/2 C. milk
1/4 tsp. salt

1/2 C. chopped nuts, your choice
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350º and flour and grease 2 - 8 inch layer cake pans.

Cake: Cream butter with sugar. Sift other dry ingredients and add the dry ingredients alternately with the poppy seed mix to the butter/sugar mix. Fold in the 4 egg whites, beaten stiffly. Pour this batter evenly into cake pans and bake for about 30 minutes or until toothpick comes out clean.

Filling: Mix top ingredients in a double-boiler saucepan and cook for 5 minutes, stirring constantly. Cool. Add 1/2 C. chopped nuts and 1 tsp. vanilla. Spread between the two cooled layers of Poppy Seed Cake.

Frosting: Any 7 Minute Boiled Frosting
