1 3/4 c. flour
1 1/2 c. sugar
1 tsp. salt
1 1/2 tsp. baking soda
2 tsp. cinnamon
2 eggs
2-3 bananas, mashed
1/2 c. oil
1/4 c. buttermilk
1 tsp. vanilla
1 c. coconut
1 c. chopped nuts- optional

Directions:
Directions:
Sift together flour, soda, salt, and cinnamon. Combine eggs, sugar, bananas, oil, buttermilk, and vanilla. Fold in flour mixture. Fold in coconut and nuts. Pour into greased loaf pan. Bake at 325º for 1 hour.
