Ingredients: 2 cups boiling water 1 cup oats 2 tbsp. shortening 2 tsp. salt 1 package of yeast ½ cup warm water ½ cup molasses 5-6 cups flour

Directions:Pour boiling water over oats and stir. Cool. Add shortening and salt. Dissolve yeast in warm (100 degrees) water and let stand for 5 minutes. Add that and the molasses to first mixture. Add half the flour (3 cups) and mix with beater for 2 minutes. Then add most of the rest of the flour, mixing by hand with spatula. Pour out onto counter which has some flour on it. Knead for at least 100 times adding a little flour if terribly sticky. Put about ½ tablespoon of oil in a large bowl and rub all over surface. Place dough in bowl, press down and turn over so the top shows the oil. Cover with plastic wrap and set aside to rise for about 1 hour or until it has doubled in size. Remove to floured counter, cut in half and pat each to an oval about 6x8" and roll tightly. Place smooth side down in 5x8" greased bread pan then pull out and turn upside down so smooth side is up. Repeat with other oval and cover with plastic wrap. When top is level with edge of pan place in preheated 350º oven (remove plastic) and bake 40 minutes. If tops seem to be getting too brown, lay a piece of foil over tops. Remove from oven and place loaves on rack and take a piece of butter and rub all over surface.
