12 thick bacon slices, in 1" pieces
4 slices day old bread cut into 1" cubes
9 cups salad greens
1 1/2 cups blue cheese

Dressing

4 cloves garlic crushed
1/3 cup balsamic vinegar
2 tbsp lemon juice
1 1/2 tsp Dijon mustard
1 1/2 tbsp herbs ( parsley, chives, tarragon,)
1/2 cup olive oil
salt and pepper

Directions:

Fry the bacon until crisp. Remove from the fat. Saute the bread in the bacon fat until crisp and brown.
Whisk the dressing ingredients together. Combine the greens, blue cheese, croutons and bacon and toss with the dressing.
