16 butter crackers (Ritz or I like Chicken in a Biscuit)
1/2 c. grated parmesan cheese
3 Tbsp. butter
4 Boneless, skinless chicken breasts
Dash of salt and pepper

Directions:
Directions:
Heat oven to 400º. Place crackers in a plastic bag, crush into crumbs and place in shallow bowl. Add cheese, salt & pepper and mix well. Melt butter. Place chicken breasts in bag, two at a time, and pound thin with small pan or meat pounder. Brush chicken with butter, then coat with crumb mixture. Place on foil-lined baking sheet, and bake 15 minutes.

I use chicken tenderloins (about 10). Then you don't need to pound them thin. I usually make more butter and cracker mixture since my family likes the coating. Great for a quick meal and easy clean-up (with foil-lined pan).
