2 packages of frozen chopped spinach
1 c sour cream
1 package dried onion soup mix
4 oz shredded cheese
2 slices fresh buttered bread

Directions:
Directions:
Cook spinach as directed on package. Drain well and press out excess moisture. Place in large mixing bowl. Add sour cream and soup mix.

Preheat oven to 350ºF. Add shredded cheese to spinach and mix well. Transfer to shallow 2 quart casserole.

Lightly butter bread slices. Shred bread. ( You could use panko bread crumbs but the buttered bread shredded through the food processor is better.)
Sprinkle bread crumbs over the top of the casserole. Bake 20 to 25 minutes.

This recipe can be doubled. You can prepare it ahead of time. Leave it in the fridge and then bake it when needed. Also can be good reheated.
