Boneless, skinless chicken breasts - I usually buy the 3# bag of frozen
chicken breasts when they're on sale
3-4 ribs celery
small amount of minced onion
salt and pepper to taste
2-3 tsp. sugar
Mayonnaise to moisten

Directions:
Boil the chicken breasts in salt water until tender. (I usually cook up the
entire amount of breasts in the bag)
Transfer to refrigerator and chill until they are cool. I use my food processor/chopper and process chicken to a fairly fine consistency, and do the same with the celery and onion. Add mayonnaise to make consistency to spread on sandwich bread - add salt and pepper to taste, also sprinkle in small amount of sugar. This is excellent on whole wheat bread, fancy crackers, etc. It's a favorite with the family and friends..
