10 lemons, scrubbed
1 1/4 cups sugar
pinch of salt
5 cups cold water

Directions:
Directions:
Cut lemons in half, lengthwise, and slice thinly as if for garnish. Mash the slices with sugar and salt in a large, deep bowl with a potato masher until the slices give up their juice, the sugar dissolves and the juice is syrupy--about 4 minutes. Pour half of the lemon slices into a sieve over a bowl or a pot, pressing the solids to release as much liquid as possible. transfer the liquid to a pitcher and repeat the process with the remaining slices. Stir in the water until blended. add ice cubes or chill. Serve over ice after stirring well.
