2 T canola oil
1 large onion, chopped
2 carrots, peeled and diced small
2 cloves garlic,minced
1 1/2 lb ground beef
1 t salt
1/2 t pepper
2 T flour
2 T ketchup
1 cup chicken broth
1 t Worcestershire sauce
2 t freshly chopped rosemary leaves
1 t freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup frozen peas

Mashed potatoes--any kind--from a box or homemade

Pour canola oil in 12 inch saute pan and saute onion and carrot over medium heat until they take on color, 3-4 minutes. Add garlic and stir to combine. Add the meat and salt and pepper and cook until brown and cooked through. Sprinkle the meat with flour and toss to coat, continuing to cook for an additional minute.

Add ketchup, chicken broth, Worcestershire, rosemary and thyme, stirring to combine. Bring to a boil, reduce heat to low and simmer slowly, covered for 10-12 minutes or until the sauce thickens slightly.

Add the corn and peas to the meat mixture and spread in the bottom of an 11x7 glass baking pan. Top with mashed potatoes, starting around the edges of the pan to create a seal to prevent the mixture from bubbling up over the potato mixture and spread evenly with a rubber spatula.

Place on foil lined baking sheet and bake for 25 minutes at 400 degrees. The potatoes should be just beginning to brown. Let cool for 15 minutes before serving.

Naima loves this dish, but she insists on the organic ground beef we usually buy! Traditional Shepherd's Pie is made with ground lamb, but, no one here would eat that!
