3 15-19 oz cans of cannellini, Great Northern or small white beans, rinsed and drained
1 lb Jimmy Dean original flavor breakfast sausage, no casings
1 T olive oil
2 medium onions, chopped
2 garlic cloves, minced fine
1 28 oz can plum tomatoes in juice
32 oz chicken stock
1/2 t salt
8 oz ditalini or tubetini pasta
5 oz baby spinach leaves
grated Parmesan cheese

Directions:
Directions:
In a 5 quart stock pot, over medium-high heat, cook sausage meat until browned, breaking up meat with a spoon. Remove meat with a slotted spoon to a plate lined with paper towels. Let sit to drain.

Reduce heat to medium. Cook onion in drippings until tender and golden, about 5 minutes. Add garlic and saute for an additional minute. Add tomatoes with their juice and chicken stock. Break up the tomatoes with a spoon. Simmer for 15 minutes.

Add beans and simmer 15 minutes longer. Add sausage meat and heat through.

Meanwhile, cook pasta as label directs, but, do not add salt.

Just before serving, stir in spinach and cooked pasta. Serve with grated Parmesan.
