1 8 inch unbaked pie shell
1/4 cup chopped scallions
4 oz cream cheese
1/8 lb shredded cheese, Gruyere, Swiss, jack, whatever...
1/2 lb shrimp, shelled and deveined
1 T melted butter
3 large eggs
1/2 cup milk
black pepper, cayenne, to taste
1/8 to 1/4 cup chopped cilantro

Directions:

Follow directions for pie shell. Set aside.

Preheat oven to 425 degrees.

Melt butter and saute shrimp, scallions and cilantro. Cut cream cheese into 1/4 inch slices and cover the bottom of the pie crust with them. Add the shrimp mixture, then top with shredded cheese.

Mix together eggs, milk, pepper and cayenne. Pour over the top.

Bake 10 minutes, then reduce the temperature to 350 and bake another 30 minutes.
