1 T. vegetable shortening
2 lbs. beef chuck fillet steak, cut into 1/2 inch cubes
2 c. beef broth
2 c. chicken broth
1 (15 oz.) can tomato sauce or diced tomatoes
2 med. onions, diced
3 T. pure ground red chilies (or chili powder)
1 t. cayenne pepper
1 T. salt
3 T. chili powder
1 1/2 t. ground cumin
2 1/2 t. minced garlic
1 t. freshly ground black pepper

Directions:
Directions:
Heat the shortening in a 4-quart cast iron Dutch oven over medium heat. Add the beef and brown on all sides.
Add the broths, tomato sauce, onions, ground red chiles, cayenne, and salt. Bring to a boil, then cover and continue to boil until the meat is almost tender, about 45 minutes.
Stir in the chili powder, cumin, garlic, and black pepper. Reduce the heat to low and cook 30 minutes. Adjust the consistency with more beef broth, if desired.
Serve with cheese, onions and jalapenos.
