1 lb boneless, skinless chicken breasts
6 cloves of garlic, chopped
1 t. ground ginger
½ c low-sodium soy sauce
2 T. chili paste
1 onion
12 oz. rice noodles
1 T. canola oil
1 T. brown sugar
½ C. water
¼ C. crunchy peanut butter
2 green onions

Directions:

Cut chicken into bite-size pieces and place in a bowl. Add garlic, ginger, soy sauce, and chili paste to the bowl. Stir and refrigerate for 30 min.
Peel onion and cut in half, cut each ¼ inch strips.
Cook rice noodles as suggested, drain and keep warm.
Heat oil in large pan over medium-high. Add brown sugar and stir until dissolved. Add onion and cook for 5 minutes. Remove chicken pieces from marinade but don’t discard marinade. Add chicken to pan and cook for 5 minutes. Add marinade and water and bring to a boil. Reduce to low heat and cook for 5 minutes. Add peanut butter and stir until completely incorporated. Chop green onions into little slices and toss with chicken and noodles.
