2 c. sugar (brown or regular)
1 c. shortening
2 eggs (or powdered)
3 1/2 c. flour (substitute 1 c. cornmeal)
2 c. applesauce (canned or fresh)
2 c. oatmeal (quick cooking)
2 tsp. nutmeg
2 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
2 c. raisins (cooked slightly)
1 - 2 c. nuts if desired

Directions:
Directions:
Cream sugar and shortening together and add the eggs, beating until smooth. Add the baking soda to the applesauce and mix well, and add to the creamed mixture. Add oatmeal, salt, nutmeg and cinnamon, flour, raisins and nuts. Mix well. Bake at 425º for about 10 minutes or until brown.

For variety, leave out nutmeg, cinnamon and raisins and add 1 cup chocolate chips.
