6 LG. Green bell peppers
1 lb lean ground beef
1 clove garlic, crushed
1-1/2 c. Cooked rice
I cup tomato sauce
Boiling salted water
1 LG onion, chopped fine
1/4 to 1/2 t. Hot pepper sauce

Directions:
Cut thin slices from stem of pepper and remove membrane and seeds. Parboil for 5 minutes in boiling salted water to cover. Combine beef, onion and garlic in skillet. Cook until beef loses its red color. Drain off any fat. Stir in salt, pepper sauce, 1 cup tomato sauce and rice. Fill peppers with mixture. Put in 8x8x2 inch baking dish. Pour remaining tomato sauce over and around peppers. Cover with foil and bake at 350 for 45 minutes. Uncover and bake 15 minutes longer. This can be frozen--- just don't bake after filling peppers. Place in foil and freeze. When you want to use the dish, place in oven and finish cooking.

This is Aunt Pauline Flagler' s recipe. It is a favorite of ours in the Summer when bell peppers are fresh from the garden. Momma would make these on a week night and invite her children out to eat supper with her and Daddy.
