1 1/4 c. milk or almond milk (unsweetened)
1 c. rolled oats
1 T. vegetable oil
2 eggs, beaten
1/2 c. whole wheat flour
1 T. brown sugar
1 tsp. baking powder
1/4 tsp. salt
2 tsp. cinnamon

Directions:

1. Combine the milk and rolled oats in a bowl and let sit for 10 - 15 minutes.
2. Stir together the flour, sugar, baking powder, salt and cinnamon.
3. Add the oil and beaten eggs to the oat/milk mixture, mixing well. Stir in the dry ingredients, mixing just until moistened.
4. Let stand for 5 10 minutes.
5. Bake on a hot, lightly oiled griddle, turning when the top is bubbly and the edges are slightly dry.

I've been making these pancakes since the early 80s and they're still a favorite. They freeze beautifully and are also great spread with nut butters.
