Marinade:
1 tbsp sherry
1/2 stsp salt
1 egg white, beaten
1 tbsp cornstarch
1/2 tbsp vegetable oil
1 lb medium shrimp

Assembly:
1 cup cornstarch
1 tbsp ketchup
1 tbsp chicken broth
2 tbsp sugar
1/2 tsp asian chili sauce
3 cloves garlic
1/2 tsp minced ginger root

Directions:
Directions:
Combine wine, salt, egg white, 1 tbsp cornstarch and vegetable oil. Add shrimp and marinate for 30 minutes.
Place remaining cornstarch in a bowl. Add marinated shrimp and toss well. Place shrimp in a colander and shake to remove excess cornstarch. Heat wok over high heat and add oil. Heat to 375ºF. Drop 1/2 of the shrimp into the oil and cook until light golden, about 2 minutes. Remove and drain on paper towels. Cook remainder of shrimp. Drain oil from wok and reheat over high heat. Combine remaining ingredients and add to wok. Bring to a boil, add shrimp, and toss.
