6 qt. (approx. 20-24 med. size) apples (peeled and cored)
10 cups water
1 tsp. salt
1 c. corn starch
5 1/2 c. sugar
2 tsp. cinnamon
1/4 tsp. nutmeg
3 tbsp. lemon juice

Directions:
Directions:
Slice the apples and pack quart bottles with raw apples. In a large pan heat the water, salt, corn starch, sugar, cinnamon, and nutmeg. Stir before the water gets real hot. While it is warm add the lemon juice. Stir until it thickens. When the water comes to a boil, pour over the apples in quart bottles. Cook in a pressure cooker for 8 minutes at 5 lbs. pressure.
