Simple Rice Pilaf Recipe

3 T. olive oil
1 small onion chopped. fine
1 c. uncooked long grain rice
2 c. chicken broth
1 T. Italian seasoning
1/2 c. toasted almonds (sliced or chopped)

Directions:
Directions:
Saute onion in olive oil and add rice. Cook for about 5 minutes stirring constantly, until onion is transparent and rice is nicely browned. Put into a baking dish.

Bring broth to a boil and pour over rice and cover. Bake at 350º for about 30 to 40 minutes, till rice is tender. Let stand 10 minutes and fluff with fork before serving. Top with almonds if desired.
