6 slices bacon, chopped
2 onions, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1/2 tsp each: basil, oregano, hot pepper flakes
1/4 tsp each: marjoram, rosemary, thyme
5 cups chicken stock
28 oz tin tomatoes, chopped
1 cup elbow macaroni or orzo pasta
398 ml tin artichoke hearts, drained and cut into wedges
salt & pepper
1/4 cup chopped parsley
1/2 cup parmesan cheese

Directions:
Directions:
In a large, heavy pot, cook bacon, onion, celery, garlic, hot pepper flakes and spiced over medium/high heat, until bacon is well cooked and the onion is soft.
Stir in chicken stock and tomatoes with juice. Bring to a boil. Add pasta. Reduce heat and simmer uncovered until pasta is tender. Stir in artichokes. Heat 2-3 minutes. Garnish with parsley and parmesan.
